The sentence certainly could be structured that way, and I think your way is preferable to mine because you keep the verb intact. I was trying to emphasize that the pronoun “which” is plural in *this* sentence but not always.

My preference would be to write it thus: “. . . in this particular sentence, the relative pronoun is plural.”
